Chef professionista, abilitato alla somministrazione di alimenti e bevande.Personal ChefSommelier professionista diplomata AIS (Associazione Italiana Sommelier) segue degustazioni e visite in cantina in diverse zone in Italia e all’estero.Sommelier onorario dell’ “Association des Sommeliers Jura Franche-Comté” Francia dove partecipa alla giornata della “Percée du Vin Jaune2010” Arbois 7 febraio 2010.
Corsi di formazione
Corsi di formazione professionale c/o Gambero Rosso.
Partecipa alla giornata inaugurale della Città del Gusto all’interno della Città della Scienza di Napoli con una gara a tema: “Una sera all’improvviso” con lo Chef Massimiliano Mariola.
Partecipa a corsi di panificazione con le famose Sorelle Simili di Bologna.
Segue corsi di Assaggiatore di Olio istituiti da vari Enti riconosciuti.
Docenze
Da settembre 2011 svolge attività di docenza in seno al Progetto “Cuoco per il recupero delle vecchie tradizioni dell’arte culinaria salentina”.
In aprile 2012 svolge attività di docenza in seno al Progetto “Bollenti Spiriti”, programma della Regione Puglia per le Politiche Giovanili, in qualità di esperta sulle Tradizioni Enogastronomiche Salentine.
Da maggio a ottobre dal 2012 ad oggi, tiene corsi per studenti e docenti stranieri provenienti da tutto il mondo per conto Università del Salento (Centro Linguistico d’Ateneo) e del SIS (Scuola d’Italiano per Stranieri)
In novembre 2012 svolge attività di docenza per Assiform Europe di Brindisi regolarmente accreditato presso la Regione Puglia, ha ottenuto il finanziamento per il corso “Cuoco” (per il Recupero delle vecchie tradizioni dell’arte culinaria brindisina).
Da Maggio 2016 svolge attività di docenza presso la città del Gusto Gambero Rosso di Lecce, corsi per imparare a conoscere e preparare tre prelibatezze tipiche della tradizione pugliese e salentina.

La scuola si trova in Corte dell’Idume, nel cuore del barocco leccese dove si narra, sin dal 500, nascesse il fiume Idume. Tra pietre secolari e antiche volte in un ambiente armonioso vi è anche una cava a forma di cono capovolto nata per la raccolta dell’acqua piovana dove oggi si degusta il vino, “La Cantina Meditativa”.
Desiderio di Gianna è di fondere sapori e tradizioni con competenza ed empatia, dove chi sceglie di preparare una pietanza ambisce a valutarne l’essenza attraverso momenti veri e unici.
Imparare i segreti della cucina salentina e preparare deliziose pietanze grazie ai nostri corsi ”mani in pasta”.
Gli ospiti provenienti da ogni parte del mondo vengono a Cooking Experience per godere di un’esperienza indimenticabile.
Gianna è felice di condividere con loro molte ricette e le tecniche per la preparazione di una varietà di piatti salentini che soddisferanno anche i buongustai più esperti. Quando aggiungerete queste ricette ben collaudate alla vostra collezione, sarà come portare a casa un pezzo di storia culinaria pugliese!
Si preparerà un sano, autentico pasto pugliese, utilizzando i migliori ingredienti locali e biologici, che variano a seconda della stagione.
Le lezioni sono limitati a piccoli gruppi di partecipanti e ognuno ha la possibilità di cimentarsi in nuove tecniche, fare la pasta fresca e godere di un bicchiere di vino locale.
Il corso potrà essere tenuto in lingua inglese ed ogni lezione avrà una durata di circa 3 ore e seguirà un pasto italiano in stile familiare con degustazioni di vini locali.
Il nostro chef presta sempre una maggiore attenzione alle particolari esigenze dietetiche dei nostri ospiti, come vegetariani, vegani, macrobiotici, senza glutine, o menu antiallergico.
Su richiesta, le lezioni potranno essere tenute nella vostra villa o residenza in Salento oppure la scuola potrà organizzare un corso speciale nella vostra città, ovunque vi troviate.

The school is located in Corte dell’Idume, in the heart of Leccese Baroque, where it is said, since 500 flowed the river from which it takes its name. Guests from all over the world come to Cooking Experience to enjoy an unforgettable experience.
Gianna is happy to share with them many recipes and techniques for the preparation of many of the most traditional dishes of Salento, which will satisfy even the most experienced gourmets. When you add these well-tested recipes to your collection, it will be like to take home a piece of culinary Apulian history!
It will prepare a healthy, authentic Salentino’s meal, using the finest local and organic ingredients, which vary according to the season.
The classes are limited to small groups of participants and everyone can try new techniques, make fresh pasta and enjoy a glass of local wine.
The course will be taught in English and each lesson will last for approximately 3 hours and will follow an Italian family-style meal with local wine tastings.
Our chef always pays more attention to the special dietary needs of our guests, such as vegetarian, vegan, macrobiotic, gluten-free, or anti-allergic menu.
Guests who do not want to cook are invited to accompany the chefs (as the meal is prepared can relax in the garden or enjoy a leisurely stroll through the historic center of the city) and then join the dining table.
Upon request, the lessons can be held in your villa or residence in Salento, or the school may organize a special course in your town, wherever you are.
